(Copycat) Chipotle Guacamole

This guacamole has been a total game changer in the kitchen for us. Did you know that this guacamole perfection can be made in under ten minutes?  You only need seven ingredients and this is hands down the best guacamole ever (it is even better fresh!).  This is one dish that our family could eat every single night and never get sick of it. A large bowl of this guacamole is a well-rounded meal in my opinion but you can also eat it with tortilla chips, top your salad with it, or add it to our delicious vegan tacos . We have even consumed it straight out of the bowl with a spoon! No matter how you enjoy it you cannot go wrong!

Here are a two tips that we have learned it makes a huge difference in flavor:

  1. Be sure to finely chop the jalapeno and the onion! (think pea sized or smaller)
  2. When searching for the perfect avocado it should be very dark green almost brown and it should feel squishy but still firm.

Our current favorite clean store bought chip right now is the Kirkland Organic tortilla chips from Costco. It doesn’t have that delicious lime flavor like Chipotle but the texture is perfect for dipping and it is not too salty or flimsy like most store bought chips are. Chipotle Guacamole

This Copycat Chipotle guacamole is hands down the best guacamole we have ever made and we make this every week! 

Servings 2 people

Ingredients

  • 2 small avocados firm and squishy
  • 2 tsp lime juice freshly squeezed
  • 2 tbsp cilantro fresh chopped
  • 1/4 cup red onion finely chopped
  • 1/2 jalepeno seeded (hot) no seeds (medium) finely chopped
  • 1/4 tsp salt

Instructions

  1. Cut the avocado in half, twist and then remove the pit and the skin.

  2. Place the avocado into the bowl and mash up well with a potato masher or fork.

  3. Lightly coat avocado with lime juice and add in the salt with your fork or potato masher.

  4. Add in the cilantro, red onion, and jalapeño and mix well.
