Vegan Taco “Meat”

Do you ever feel like your family goes through food phases? We are in a serious Mexican food phase right now and this recipe is one we make at least twice a week ! We love this first and foremost on warmed up flour tortillas topped with salsa and fresh guacamole but it is also amazing on salads, or nacho style! We usually make a double batch of this to use leftovers the next day! The best part of this is that it is packed with protein with the quinoa and black bean combination!

Vegan Taco "Meat"

Ingredients

  • 1/2 cup quinoa
  • 1 can black beans

Spices

  • 2 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder

Instructions

  1. Cook quinoa per package instructions (approximately 15-20mins) I prefer the pre-rinsed quinoa

  2. Rinse can of black beans well and combine with cooked quinoa into a pot and mix in all of your spices

  3. Remove black bean quinoa mixture from heat and stir in a handful of fresh cilantro and enjoy on top of flour tortillas with your favorite salsa, guacamole, or tapatio!
