Vegan Street Tacos

I had an intense craving for a street taco which was the initial reason for this recipe creation. Shockingly, even in the Phoenix, AZ area I could not find a place nearby that served a Vegan street taco. If you know of any please comment below I would love to try out any restaurant that does! My favorite street taco is actually a local Mexican restaurant nearby and they make the best street taco I have ever had. Sadly, that restaurant does not have any vegan options at all and I really miss going there. 

This was a dual effort between my husband and I to create this amazing “meaty” taco. We met at work 8 years ago and I still enjoy working with him to this day. We make a great team and I love that we created something so delicious together. We always test our recipes at least three times. Everyone loved these the very first take but by the time we created our final recipe they were really a huge hit with our entire family. We tried to keep the ingredients list smaller to keep these simple and inexpensive to make.

I would also suggest topping these with Tapatio and/or your favorite salsa to give these some spicy kick. We always add fresh avocado or guacamole to ours as well because what is Mexican food without avocado? Check out our favorite guacamole recipe! I hope that you enjoy every bite of these Vegan tacos!

*Tip- If you have any ingredients left over make taco bowls or salads the next day!

Vegan Street Tacos

Servings 4 people

Ingredients

  • 1/2 cup quinoa
  • 1 can black beans
  • 1 green bell pepper diced
  • 1 orange bell pepper diced
  • 1 yellow bell pepper diced
  • 1/4 red onion diced
  • 2 tbsp vegan butter
  • 10-12 street tacos (flour or corn)

Spices

  • 2 tsp chili powder
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder

Instructions

  1. Cook quinoa per package instructions (approximately 15-20mins) I prefer the pre-rinsed quinoa

  2. Chop bell peppers and the poblano and set aside, chop red onion separately

  3. Add vegan butter into pan and saute bell peppers and poblano together

  4. After 5 minutes place chopped red onion in until they become see through

  5. Rinse can of black beans well and combine with cooked quinoa into a pot and mix in all of your spices

  6. Remove black bean quinoa mixture from heat and stir in a handful of fresh cilantro

  7. Assemble taco with "meat" then add the veggies and any other toppings you would like we love to add fresh guacamole! 

  8. Enjoy one, two, or even three of these delicious tacos!
